Experimental Food 20190604 - Pork Chops with Cherry Ginger Sauce, Roast Brussel Sprouts, Barbacoa Steel Cut Oats with Mushrooms

A simple meal, really. Pork chops, brussel sprouts, steel cut oats. Except ... not that simple.

Out shopping today, and I really wanted bone-in meat. Easy to make a case that, ceteris paribus, bone in is superior. Found a few packages of thick bone in pork chops, and bought them all.

Made a variant on this. Started the chops on the grill, then finished in the sauce.


This sauce is simply addictive.
















The brussel sprouts were halved, oiled and spiced to perfection, and then roasted until crispy on the outside. Perfect little chips.

Last, the oatmeal. In the crockpot, 2 cups steel cut oats, a cup of frozen corn, 10 ounces or so sliced white button mushrooms, a cup plus salsa, a box of beef stock (4ish cups), and what was left of Spock's Blessed Barbacoa. 3 hours later, it finally thickened.

I liked it a lot. Maripat, well, not so much.
