Once upon a time, Chef Maripat made something called Buffalo Cauliflower Wings. Those are small pieces of cauliflower, coated in a buffalo wing sauce (Frank's, butter {KG of course}, seasonings), and IIRC they cooked in the air fryer. Maybe the oven.


Regardless, they were wonderful, and we ate all that were prepared. But, there was maybe a quarter cup of the sauce leftover. Into the fridge it went.

When I make my favorite easy egg dish, I always remember to lube spray the pie plate. It just makes everything better.

Today, for various food monster reasons, I wanted eggs, et al. So, instead of using the spray lube, I used the buffalo wing sauce. Maintaining my position as Chief Leftover Remover. Or maybe godfather of leftovers. How to ...

Taste the buffalo wing sauce for heat content. You can always make it mo hotta mo betta.

In a pie plate, place 1/4 cup buffalo wing sauce, and nuke for 30 seconds. Swirl plate to properly coat. On top of that, sprinkle 2 ounces smallish cubed Kerrygold Reserve Cheddar. Nuke that for 30 seconds.

In a mid sized mixing bowl, crack 4 eggs, 1/2 cup Weggy's 1% fat cottage cheese, 3 tbsp applewood smoked bacon crumbles, and a healthy squirt of sriracha. Whip with a fork to combine. Pour egg mixture over cheese.

Nuke for 4 minutes 30 seconds. The dish cooks from the outside in. I prefer mine done so that there's a bit of uncooked egg mix in the middle. YMMV. Onto that middle part, add as much Wegmans Hot Salsa as you want.

Devour.
