20190606 Experimental Food - Barbacoa Cheddar Cheese Egg Nuke

This is just the lastest in a long line of egg dishes, easily prepared in the microwave. The mise is interesting as well.

A while back, I encouraged Jack Spock to make barbacoa, by sending him here. He improved on the concept ...

"So, I coated the brisket with onion, garlic, salt and pepper prior to the smoker. Then the hickory smoke. This is on top of the recipe which calls for none of that. We maybe enhanced it!

We arranged kind of a barbacoa / refried beans / tortilla / tequila party. Then we feasted. It was great AF.

Afterwards, we were sent home with a substantial portion of leftover barbacoa.

And, that's the hard way to get one ingredient ready.


The second ingredient is easier, kind of. Hard cheeses are inherently low carb, because the aging process allows the bacteria to eat the milk sugars. My preferred hard cheese is Kerrygold Reserve Cheddar. They go thru a lot of work to make it, BJ's goes to some effort to supply it to me, and I make the effort to not eat the entire 600 gram block all at once. Calories, dontChaKno.




The third ingredient is chili garlic sauce. This stuff is available everywhere, except when you really really want it. Then, your favorite place for it will be out. So, keep that pantry stocked.

Lastly, there's eggs. We had a dozen that had somehow survived a week, that were being aged to be boiled to make another batch of pickled eggs. To replace the batch that I finished off yesterday. Well, I wanted these, and my food monsters want what they want. Regardless of those 3 pickled eggs yesterday afternoon, and this dish sans chili garlic sauce yesterday earlier.

Finally, how to assemble: Chop roughly a cup plus of the barbacoa, and layer it onto a spray lubed glass pie plate. Nuke for 30 seconds. Cube 75 grams or so of the cheese, distribute atop the meat, and nuke for 30 seconds.

In a prep bowl, whip 3 eggs and 2 tbsp chili garlic sauce. Pour over the top of the meat cheese layer. Nuke for 3 minutes. A substantial meal ...
